Welcome to Pearl’s Red Hots, where classic comfort food gets a flavor-packed upgrade—and a whole lot of personality. Pearl’s is a nostalgic-yet-modern tribute to Brad’s late mother, Pearl—the matriarch who always had lunch ready and a deep love for Frito Pie. Fittingly, the lease was signed on what would have been her 101st birthday.
Inspired by the unapologetically bold attitude of a true hot dog stand—with a creative twist—Pearl’s celebrates flavor and family in every bite. From the indulgent Polish Boy (a nod to Brad’s Polish heritage and Cleveland’s iconic sandwich) to the lean and flavorful Slovak Girl (inspired by Valerie’s roots and modern palate), these items honor tradition while satisfying today’s cravings—including vegan and gluten-free guests.
With one half of the duo behind some of LA’s most beloved restaurants, and the other half handling all things design, tech, and “what-can-I-eat” advocacy—Pearl’s Red Hots is more than just a restaurant. It’s a passion project, a love letter to family, and a hot dog haven with serious soul.

Meet Brad Roen, the fearless force behind Pearl’s Red Hots. After four decades of shaking up LA’s restaurant scene—from his very first venture, a Chicago-style hot dog joint called Beamers in Agoura Hills to the neighborhood favorite Vitello’s—Brad finally hung up his apron... but only briefly.
Retirement lasted all of five minutes.
Known for his boundless energy and titles that range from hot dog aficionado to bounty hunter, Brad’s latest chapter brings him full circle—back to the counter, back to the sizzle, and back to his roots. Pearl’s Red Hots is a tribute to his mother Pearl, whose name graces the awning and whose spirit flavors every bite.
Whether he’s crafting the perfect dog, charming guests with wild stories, or talking shop with fellow foodies, Brad lives to make the impossible… possible. After all, who better to command the beef than a guy who's been marinating in the restaurant biz his whole life?
Valerie Roen — Brains Behind the Buns
Designer by Passion. Operator by Nature. Slovak Girl with Serious Bite.
Valerie Roen is the creative mind and operational backbone behind Pearl’s Red Hots.
While Brad brings the beef, Valerie brings everything else—from branding, logo and menu design, web and social media, accounting to POS programming, troubleshooting, and the almighty task of making sure the vegan and gluten-free crowd feels welcomed (and fed).
Before hot dogs, Valerie was an Automation & Controls Engineer and in her spare time, won several game shows (she took home The Showcase twice on The Price Is Right). Eventually, she traded blueprints for color palettes and now uses that detail-driven mindset to craft designs—and businesses—that connect emotionally and function seamlessly. She proudly represents those of us who ask, “So… what the heck can I eat?” Thanks to a little creative ingenuity, the answer at Pearl’s is: plenty.
